This timeless cake is delightfully light, with a fluffy texture and rich, buttery vanilla flavour. It's the perfect centrepiece for any birthday celebration and is sure to bring smiles and delight to everyone that tries it!
Ingredients
Cake:
2 ½ cups self raising flour
2 ½ tsp baking powder
½ tsp salt
1 cup unsalted butter, room temperature
1 ½ cups granulated sugar
4 large eggs
1 cup whole milk
2 tsp vanilla extract
Buttercream Frosting:
1 cup unsalted butter, room temperature
4 cups icing sugar
2 tbsp double cream
2 tsp vanilla extract
Food colouring (optional)
Method
Preheat and Prepare:
Preheat your oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans, or line them with parchment paper.
Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Cream Butter and Sugar:
In a large bowl, using an electric mixer, beat the butter until creamy.
Gradually add the sugar, continuing to beat until the mixture is light and fluffy.
Add Eggs and Vanilla:
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract.
Combine Wet and Dry Ingredients:
Alternately add the flour mixture and the milk to the butter mixture, starting and ending with the flour mixture. Beat until just combined.
